When covid hit and the world stopped, life at the farm carried on. At Dexters, one of our main dreams was to offer a complete farm to fork story.
We focus our attention on the Dexter breed of cattle, they are small and infrequently bred due to their non commercial size. However, what they lack in size, they more than make up for in their quality. They truly are exceptional.
About a year ago we started rearing our own Dexter herd under the watchful and loving eye of our herdsmen, Stuart Rudge of Llwyn Farm – Llangain, and the fruits of our labour are starting to come to fruition. Our well established herd are enjoying the lush pastures Carmarthenshire has to offer and we are starting to feature them on our menu after the very important in house dry ageing process. I’m so proud to be a part of this project and the passion involved is immeasurable. It really is a labour of love and I believe that passion shows through in the product.
We will never be able to produce the amounts required to run the restaurant in its entirety. However, we are blessed to have an amazing relationship with Celtica, in particular Mike Smith [master butcher], and Mathew Evans [director], who work closely with me to help pick cattle from Carmarthen, with specific breeds and characteristics.
I feel we are in good hands.
We will be shouting from the rooftops when we have our own cattle available, and we would encourage people to pre order these cuts as the quantities will be limited.
A big thank you to all that are involved in the whole process, it is an amazing thing.
I [we] are nothing without our incredible team, who have truly invested into making our story what it is today.I cannot thank you enough!
If anyone would like to know more about what we do or know of any Dexter farmers/breeders with a passion for quality please get in touch.
Thanks again,
